Paleo Chai Banana Bread

Paleo Chai Banana Bread

  • 4 ripe bananas- 3 mashed; 1 sliced and set aside
  • 4 eggs
  • 1/4 cup coconut sugar syrup/honey
  • 1/3 cup coconut oil, melted
  • 1/3 cup coconut flour
  • 3 Tbsp arrowroot starch
  • 1/8 tsp nutmeg
  • 1 tsp ginger
  • 1 1/2 tsp ground cardamom
  • 1 1/2 tsp cinnamon
  • 1 1/2 tsp vanilla
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • extra honey for the center of the loaf
  • 1/2 cup of raw nuts of choice- I used chopped walnuts.
  • Preheat oven to 350 and grease a loaf pan. Mix all ingredients except for the sliced banana and extra honey. Pour half of the batter into the prepared pan and bake for 10 minutes then remove from the oven. Arrange a layer of sliced bananas over the slightly set bottom of the loaf. Drizzle extra honey over bananas and pour in the remaining batter. Bake for 45-50 minutes. Cool and slice. Store banana bread wrapped in the fridge.
