Fruit Leather Roll Ups

  • Fruit of choice, at least 3 cups (I used blackberries and strawberries)
  • 1/4-1/3 cup of water or no sugar added juice
  • Coconut sugar or honey (if needed)
  • Pinch of salt (optional)
  • 1 tsp vanilla (optional)


    Preheat oven to 170 degrees or the warm setting. Prepare edged sheet pans with parchment paper. Spray a small amount of a neutral oil (I used grapeseed oil) on the parchment paper. Use a paper towel to wipe oil evenly over the parchment. The parchment should just feel slick to the touch- not running with oil. Wash and trim fruit as needed. Place fruit in a sauce pan over medium heat with water or juice. Allow fruit to simmer for 15-20 minutes. Once the fruit has broken down and released juices taste and add sweetener as needed. Add vanilla and salt at this point, if desired. Pour fruit mixture into a food processor or blender. Once pureed taste again. Add more sweetener if needed. At this point you can pour the fruit puree through a sieve if the fruit you used has large seeds or if you want a smoother fruit leather. (I strained one batch but preferred the unstrained batch with more fiber.)

    Pour pureed fruit onto prepared parchment pans and spread out evenly with the back of a spoon. The thicker the layer the longer it will take to dehydrate. I spread mine to about 1/8 and inch thick. Place pans into the oven for 6-8 hours depending on the type of fruit and thickness. It is done when they are no longer sticky to the touch. Remove from the oven and allow to cool. Trim off excess parchment paper. Roll up the parchment, and with clean kitchen shears cut into desired portions. These will keep in a sealed container for a couple weeks. Enjoy!
