Morning Glory Muffins

Morning Glory Muffins

  • 1/3 cup mashed ripe banana
  • 3 eggs or 3 Flax eggs
  • maple syrup to taste (around 1/2 cup)
  • 1 teaspoon vanilla
  • 1 cup carrot
  • 1 cup apple
  • 2 cups almond flour
  • 1 cup unsweetened coconut
  • 2/3 cup chopped dates
  • 2/3 cup raw cashews, chopped
  • 2 teaspoons ground cinnamon
  • 2 teaspoons ground cardamom
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon sea salt
  • Optional 2-3 tablespoons of gf all purpose flour (wont be 100% paleo but it lightens up the muffins a little)
  • Preheat oven to 350 and line a muffin tin. In a food processor chop carrots and apple (or you can shred them). Pour into a large bowl and mix with flax eggs, maple syrup, and vanilla. Stir in remaining ingredients and let sit for 10-15 min. Fill muffin tin and bake for 25-35 minutes.

    *Flax eggs- mix 1 tablespoon ground flax with 2 1/2 tablespoons of water and let sit for 5 minutes to thicken. This equals one egg.
